In the past the wish of each vine dresser was to make a good wine : this was the passional result that bound the vine dresser to his vineyard.
"At the farm Il colombaio di Santa Chiara. Those bounds are still existing nowdays between my vineyards and myself. My father Mario transferred me this passion. He teached me that the vine is produced by the land and it can be only ameliorated in the cellar, but not be changed. The secrets of the excellence of my vines are a correct treatment of the land (no pesticides), a costant looking after the wineyard while grapes are growing, followed by a carefull selection during the vintage of the grapes (manually made) .... "

Handling:
No pesticides are used.
Vintage:
The grapes are checked since theplants have sprouted. We also check the quantity of the grapes and the vintage of the grapes is made only when they are completely ripened. The grapes are gathered by hand and put into cases of 20 kg capacity maxi.
Cellar:
The grapes ar selected for the second time , cleaned and put into basins at controlled temperature for maceration. Later on some grapes are pressed and some not, based on the type of wine to be produced.
Vinification:
Strictly at a controlled temperature in order to maintain the orginal characteristics of the grapes, specially of "vernaccia".
The wines are produced with local grapes which have always beencultivated in the territory of San Gimignano. Those species of vine have different and original features. Complex and strong fragrances, with a rich bouquet; when tasting you can appreciate the structure of the wine that remains in the mouth with a long, persistent aftertaste.
Those wines are made to be appreciated with your meals and while drinking-through you will feel the pleasant taste enhancing each type of grapes.
Vernaccia di San Gimignano DOCG
The "Vernaccia di San Gimignano" by Il Colombaio di Santa Chiara is produced with 100% of vernaccia grapes. This white wine is a typical interpretation of the main grape of San Gimignano where you taste a soft aftertaste featured by a pleasant somewhat bitter note.
Vernaccia di San Gimignao "DOCG SELVABIANCA"
The grapes stay longtime macerating on the peels; features: straw-yellow colour, fresh taste.
Vernaccia di San Gimignao DOCG "L’ALBERETA"
Bloom grape must processed into barriques. Features: straw-yellow colour, complex and smart fragrance with a pleasant flavour of vanilla.
San Gimignano Red Wine DOC "Colombaio"
Made with 90% Sangiovese grapes and small quantities of Colorino and Canaiolo. Features: excellent dark wine, garnet red coloured wine, elegant and strong perfume, by tasting the light flavour of tannins can be perceived. Ripening in barrique.
Il Priore IGT WINES (Typical Geographic Indication)
Made with 50% Sangiovese grapes and 50% Canaiolo grapes. Features: full red ruby coloured wine, rich and complex perfume, marked by a fruit bouquet. Short staying in barrique, fresh taste with vanilla flavour.
Fonteuva Rosso IGT WINES (Typical Geographic Indication)
Produced with Sangiovese , Colorini, Canaiolo grapes and dark Malvasia grapes.
Fonteuva Bianco IGT WINES (Typical Geographic Indication)
Produced with Vermentino and white Malvasia grapes.
Extra Vergin Olive Oil
Our oil is made with different varietes of olives: correggiole, moraiole, leccino.The olives are harvested at the end of October and they are pressed and extracted at cold temperature. Our extravergin olive oil has a low acidity. It gives strong olfactory sensations but it has a light taste. This oil enhances your food preparations without covering their taste.
